 The One Egg Cake is something I was forced to make when younger because “eggs were expensive”, but that was no problem since the cake tasted great..Don’t even get me started about Mr. Potato Head (serious).

 You see when we were in the mood for something great you’d just pull out a few pans and before you knew it you were feasting on warm, fresh cake. It really doesn’t take too long and for most of the time it’s in the oven baking. And it’s pretty cool that the smell of the cake can be wafting throughout the house as everybody’s watching TV. This cake is a classic and tastes fantastic. Enjoy.

Organic One Egg Cake:

Prep a 9″ x 1 1/2 ” Round Baking Pan by coating with Organic Vegetable Shortening (use your fingers). Then add some Organic Flour and work around until the entire greased surface is dusted.

Set the oven rack to the center and preheat to 350F.

Organic Ingredients are recommended but conventional can be substituted.

Measure & Add the following to a Large Mixing Bowl:

  • 1 1/2 Cups of Organic All-Purpose Flour
  • 1/2 Teaspoon of Sea Salt
  • 1 Cup of Unrefined Organic Granulated Sugar
  • 1 1/2 Teaspoon of Aluminum Free Baking Powder

Mix all dry ingredients together until you have a uniform mix. Then add the following:

  • 1/3 Cup of Organic Vegetable Shortening
  • 1 Teaspoon of Organic Vanilla Extract
  • 3/4 Cup of Organic Whole Milk
  • 1 Organic Egg

 Using an electric mixer slowly work the ingredients together until everything appears wetted.

Once that happens ramp up the mixer to high speed and beat the ingredients together for about 3 minutes (be sure to scrape the sides of the mixing bowl with a rubber spatula).

Stop mixer and pour into the prep’d baking pan.

Place pan into oven and bake for 35 minutes (a toothpick should come out clean if done).

Take out and cool on a cooling rack & serve (icing optional).

    that would sound good with some cinnamon either in the cake itself or in the icing
