Cranberry Bread is a classic for the holidays.
Shopping List:
- 2 Cups of Organic White Flour
- 1 Cup of Organic Unrefined Granular Sugar
- 1 Teaspoon of Sea Salt
- 1 Teaspoon of Aluminum Free Double Acting Baking Powder
- 1/4 Teaspoon of Baking Soda
- 1/2 Cup of Organic Orange Juice with Pulp
- 2/3 Cup of Organic Plain Yogurt
- 6 Tablespoons of Organic Unsalted Butter
- 1 Large Organic Egg
- 1/2 Cup Organic Walnuts
- 1 1/2 Cups Organic Whole Cranberries
Recipe:
- Locate the Oven Rack to the Middle and Preheat the Oven to 375F
- Prep a 9″ Bread Pan by coating the bottom and sides with Butter and then dusting with flour. Set aside for the batter.
- Put 6 Tablespoons of Butter in a Second Loaf Pan and place in the oven (We want to melt the butter for use in the recipe. Remove when the butter is melted. But there’s just keep an eye on it. Start over if it browns).
- Take out a Large Bowl.
- Add 2 Cups of White Flour to the Large Bowl.
- Add 1 cup of Sugar to the Large Bowl.
- Add 1 Teaspoon of Salt to the Large Bowl.
- Add 1 Teaspoon of Baking Powder to the Large Bowl.
- Add 1/4 Teaspoon of Baking Soda to the Large Bowl.
- Whisk the dry ingredients together to blend and set aside.
- Take out a Medium Bowl.
- Add 1/2 Cup of Orange Juice to the Medium Bowl.
- Add 2/3 Cup of Plain Yogurt to the Medium Bowl.
- The butter should be melted but fairly cool at this point. So slowly add to the Medium Bowl while whisking.
- Add 1 Large Egg to the Medium Bowl.
- Whisk the Liquid Ingredients of the Medium Bowl Together.
- Add the Liquid from the Medium Bowl to the Dry Ingredients in the Large Bowl.
- Use a Large Wooden Spoon or a Rubber spatula and mix the ingredients together. There’s no super-rush but don’t dawdle because you want the baking powder to do it’s thing in the oven and not on the counter-top.
- Add 1/2 Cups of Walnuts to the batter. Mix in.
- Add 1 1/2 Cups of Cranberries to the batter. Mix in.
- Transfer the batter to the greased and dusted loaf pan.
- Place in the oven for 20 minutes.
- After 20 minutes reduce the oven heat to 350 and bake for about 45 additional minutes.
- Remove when done (a toothpick or small knife blade will come out clean).
- Transfer the loaf to a cooling rack.
