Well, in a moment of insanity I agreed to go to Vegas to give a few talks. This will be a major challenge to organic living. .. How do you keep organic when the conventionals control the food supply? So far I’ve come up with stashing healthy snacks in the laptop bag and bringing a can of soy protein in my suitcase for late night chemical-free protein fixes. Anyway, been preparing, that’s why the past few days have been post-free. Sorry about that. Won’t be back until next Saturday so have a great week my friends and wish [...click to contimue reading...]
I just got back from my brother’s place (computer emergency) and noticed that the spice rack situation has further deteriorated. Now, not only are some spices in glass jars to let the light in, but they are on this shelf thing positioned right in front of the window. .. Sort of an effort made to get the maximum amount of sunshine on the spices… Now I almost feel guilty about exposing this to the entire world and thank God I never told him about this blog. If you like this post please share with a friend. [...click to contimue reading...]
Over the weekend I visited my parents who are still doing good .. well into their 80′s. My father always ate vegi’s and worked hard. My mother too ate well and was a very hard worker. Great people, sometimes they can’t believe I’m actually related to them. But however great it is to visit them, it’s always a bit of a challenge since they’re constantly pushing the Wheat Thins, the cookies, the cheese, the “this” and the “that”. Absolutely nothing organic and it’s tough to convince people who manged to thrive into old age without it, [...click to contimue reading...]
You need to be careful when buying fish. Basically, it’s an expensive item that goes bad pretty easily so stores sometimes hang on and try to sell it well past the time. .. First, and most obvious, go to a market that moves a lot of fish. You want that constant volume going through to insure yours is fresh. One way to tell is the size of their fish display .. very tiny means little demand. Another of course, is to note the traffic of shoppers buying fish. Also, check out the shellfish .. even [...click to contimue reading...]
Last night my date was running late so had to take a detour, run into Whole Foods, made up a couple of salads & bought a pound of wild haddock. Just had time to put something together before heading out the door (had tickets so we had to get out of there). Tossed the salads with some extra virgin olive oil and vinegar. Set aside. Then set out a deep plate so hold some milk and fried the fish: Fried Haddock What you’ll need: 1 Pound of Fresh Wild (not Farmed Raised Haddock) Deep Dish [...click to contimue reading...]
If you want warm and fresh tasting Tortilla Chips try the following: Pick up some Organic Flour or Corn Tortillas (the amount and type up to you) Preheat your oven to 400F Place Tortillas on a baking sheet Once the oven comes to temp, bake for about 15 min. You want them “Chip Consistency” .. just be careful not to over-bake and burn them Carefully remove from oven since you could be severely burned Season with Sea Salt Transfer to a serving dish Serve these guys ASAP with some room temperature salsa while they’re still [...click to contimue reading...]
This isn’t for everyone but the most die-hard of garlic fans. Here’s the deal. Right now I’m having a mid-afternoon snack of mixed hot organic veggies. And, being a garlic head, I like to occasionally ramp it up. So before I serve the veggies I take a clove of raw garlic and cut it into thin slices onto the plate. Top this with the hot veggies. What this does is barely cook the garlic .. toss things to get everything mixed. .. The result of course is an incredible hit of garlic as you’re eating. For everyone no. Spice up your boring Yellow Mustard … Open a Beer and pour into a glass a few hours before. Let it sit in the frig to go flat. Then combine the following: Organic Chile Peppers chopped fine (the type and amount are up to you. It all depends upon how hot you want it). 3/4 Cup of Organic Yellow Mustard 1/4 Cup Organic Black Mustard Seeds 1 1/4 Cup of Flat Beer 1/3 Cup of Organic Vinegar (not apple) Fresh Organic Rosemary, Finely Chopped Organic Garlic & Sea Salt to Taste Combine and store in the frig. Use this up [...click to contimue reading...]
Had to quickly pick up some Kale last night so was forced to go the conventional route at the local Biggie Mart. If you’ve ever tried to wash Kale you’ll know that the stuff acts like it’s totally waterproof. That is, water will not wash over it but beads up .. “like water on a duck’s back”. Anyway, all I could think about when eating this was what industrialized chemical was I chewing and swallowing. This totally disgusted me and made me realize that sometimes even in a pinch it’s better to go without then buy [...click to contimue reading...]
My friend Diane and I wanted to get out to play a game or two of rummy. Going to the local bar or coffee house wasn’t quite right since we also wanted something that was both good & real to eat. So we sauntered down to the local Whole Foods Market to hit their salad bar. The first thing we found was the awesome freebies. Cheese, crackers etc. But since I’m still going gluten and diary free I stuck with the Veggie Chips and the Olives with Garlic (which were incredible). Don’t get me wrong I didn’t pull up [...click to contimue reading...]
