Last night my date was running late so had to take a detour, run into Whole Foods, made up a couple of salads & bought a pound of wild haddock. Just had time to put something together before heading out the door (had tickets so we had to get out of there).
Tossed the salads with some extra virgin olive oil and vinegar. Set aside. Then set out a deep plate so hold some milk and fried the fish:
Fried Haddock
What you’ll need:
- 1 Pound of Fresh Wild (not Farmed Raised Haddock)
- Deep Dish filled with Organic Milk (Skim or Regular it doesn’t make a difference)
- Bread Crumbs or Flour
- Organic Unsalted Butter
- Good Sized Fry Pan
Recipe:
- Fill the Deep Dish with Milk
- Cut the Haddock in two pieces and set in the milk
- Flip over over the course of a few minutes a few times. We want as much milk to soak in as possible.
- Gently melt your butter in pan then set aside on a back burner
- Take out a second plate and fill with bread crumbs or flour
- Take one piece of fish out of the milk and place on the flour or bread crumbs
- Flip the fish over to coat the other side
- Pick up some more bread crumbs or flour with your fingers and get it on top of the exposed side. What we are trying to do is maximize the amount of topping so get it on there.
- Put a little heat to the fry pan and move it to make sure it’s fully coated with butter. You want a lot of butter here
- Place the first piece of fish in the fry pan with the skin side showing on top. You’ll find that like pancakes the first side that’s cooked looks best so cook the side with no skin first.
- Repeat with the second piece.
- Place the fry pan on a medium heat and cook
- While cooking add additional pieces of butter on the sides and in between the pieces. You can’t use too much butter here.
- Occasionally lift a piece and tip the pan to let some additional butter run under the fish
- When the first side is golden brown flip using a thin blade spatula. Those mega thick industrial deals will only break up your fish.
- Cook the second side using the same technique and added butter until done.
- Serve immediately.
She ate the fish (I’m gluten free so had the fun of cooking but none of the consequences of eating something I’m sensitive to). Was a big hit and actually was better than the performance we had tickets to..(was up until midnight waiting for the second actor to get killed thinking “die, please die so I can get the heck out of here”).
