Was visiting the other day and the hostess was preparing some fresh strawberries for strawberry shortcake. .. And you know what happened, large bowl, chopped strawberries and a ton of sugar. Into the frig and out comes this very sweet, runny type of deal. .. Don’t want to complain here but it has to be done. Over the top with the sugar and way too watery. Ideally sweetness like salt and pepper is best left to everyone’s personal preference. So after some experimentation we’ve arrived at a yogurt based strawberry topping that’s full of strawberry flavor, not sweet, can be sweetened individually by guests, has bits of flavorful berries, nice reddish color and some body so it’s not dribbling all over the place. Here we go:

Shopping List:

  • Plain, Non-Fat Yogurt
  • Honey
  • Fresh Strawberries

Recipe:

  • Set out some coffee mugs or other small containers
  • Chop in fresh strawberries
  • Stir in some plain no-fat yogurt (just enough to coat the berries)
  • Add a little honey
  • Cover with plastic wrap and place in the refrigerator
  • After a couple hours break the berries up with a fork
  • Return to the frig or serve

 This is a fantastic tasting topping. Now with individual serving containers the guests can simple add sugar or honey to their liking. The topping can be used in a strawberry shortcake, to top a piece of cake or cheesecake, as a strawberry addition to yogurt etc, etc.    Hope you enjoy!
